The high pressure freezing method allows the meat to keep its tenderness and juice. These small, round mollusks have a sweet and slightly briny taste, and a tender texture that is both chewy and juicy.
Uses:
When cooked, they turn a vibrant orange-red color, and their shells open up to reveal the plump and flavorful meat inside.
