The summer Beaufort from Beillevaire is as its name suggests, produced between June and October. It has an ivory flesh with yellow reflections, a brown or orange rind and is a smooth cheese.
It has woody, buttery and floral aromas.
In the mouth, a firm and melting texture with salty and nutty flavors.
