Blue lobsters are crustacean. Blue lobsters look like classic lobsters in shape but they are a rare species and noticeable for their blue outer shell colour, they get this incredible colour because they produce an excess amount of protein.

The flesh is white and the texture is firm and tender at the same time. The best season to catch this gourmet lobster is after November.
