The Capon farmer Prince de Dombes is a free-range chicken who underwent castration in the 2nd month of his life. He then spent 3 months outdoors with the breeder. He therefore lives a total of 150 days before being sacrificed for the holiday season. The capon offers a very tender, chewy flesh and an exceptional flavor.
